The recipe I am going to share with you is an adaptation of a recipe my cousin Ronnie shared with me. It is a perfect appetizer to serve at parties, and should be enjoyed in moderation, to stay health conscious! As some of you have tried this, I am writing down the way I made it, but there are many variations you can try. I will offer some suggestions at the end. Enjoy!
1 lb. Boar’s Head Everroast Chicken- cut into small dice (Have deli clerk cut into ½” thickness)
1 lb. Smoked gouda cheese- small dice (Have deli clerk cut into ½” thickness)
1 Granny smith apple- cut into small pieces
4 stalks celery- small dice
Generous handful of Craisins
2 Avocados- small dice
1 bottle Boar’s Head Fiery Chipotle Gourmaise
1 bag of your favorite Scoops Tortilla Chips
Once you have all the ingredients chopped, mix together in a bowl. (Since avocado browns quickly, I make the rest ahead of time, then add avocado as late as possible.) Lay out the Scoops onto a platter and fill each one using a small spoon. Voila! Easy as that.
This is a very simple recipe to adapt to your personal preferences. Any type of chicken or turkey can be used. You can use the cheese of your liking. Monterey Jack, Pepper Jack, etc.) I’m sure a small handful of chopped walnuts would be great in it also.
